Grilled Chicken and Skewered Vegetable Masala

  • Boneless skinless chicken breasts, cut into even cubes

  • Onion, cut into eighths

  • Mushrooms

  • Peppers, cut into chunks

  • Zucchini, cut into chunks

  • Vegetable or other cooking oil for basting

  • MiniKitchen All Purpose Masala Cooking Sauce

  • Skewers (wooden or metal)

  • Lime wedges and chopped coriander for garish, if desired

SOAK wooden skewers in water for 20 minutes to prevent burning (if using)

SKEWER chicken and vegetables on skewers and grill on BBQ on medium heat, brushing with oil and seasoning with salt and pepper, and turning until chicken is completely cooked and desired char is reached

ADD MiniKitchen All Purpose Masala Cooking Sauce to a saucepan and add the prepared chicken and vegetables to the pan, adding a few tbsp of water to create the texture of your choice (Hint: Add the water to the jar and shake - this will ensure no waste)

BRING up to heat on med-high and simmer lightly for approx 2 minutes.

SERVE with naan bread and lime wedges as pictured or rice

Variation: You can cook this all-in-one pan instead of grilling kebabs. Saute the chicken, pork, or beef in a tbsp of oil in the saucepan for 4-5 minutes until lightly browned, then add other veggies raw and saute for 2-3 minutes until starting to soften. Add All Purpose Cooking Sauce and a couple tbsp of water if desired, bring to a gentle boil, and simmer until protein is cooked through, approximately 10-12 minutes.

Skewered Masala Beef Kebab Wraps

  • 1/2 lb beef, cut into chunks (sirloin, strip, whatever cut you prefer)

  • Cucumber, cut into slices or cubes

  • Radishes, sliced

  • Tomato, diced

  • Lettuce, chopped

  • Pita wraps, Tortilla wraps, or Naan bread

  • Mint for garnish if desired

  • Cucumber raita, tzatziki, donair sauce or plain yogurt

MARINATE beef with 1/2 cup All Purpose Masala Cooking Sauce in a ziploc-style bag or a bowl covered in cling film for 20 minutes to 1 hour

SKEWER beef on metal skewers or soaked bamboo skewers (to slow burning of the skewers on the grill).

PREPARE all your veggies and wraps

GRILL your beef skewers, often brushing with additional All Purpose Masala Cooking Sauce until cooked do your desired doneness

ASSEMBLE your wraps however you desire and drizzle with sauce of choice

Variation: Try with lamb, pork, chicken, tofu or paneer!
